3 Tbsp butter
1 large bunch of kale, chopped
1 small onion, diced
3-4 medium potatoes, cut into large pieces
1 clove garlic, chopped
salt and pepper
Melt 1 tablespoons of the butter over medium heat in a large skillet. Add the onion and sauté until clear. Add garlic and kale and sauté for another minute. Add 2 Tbsp water and a dash of salt, cover and braise until tender.
Meanwhile, combine the potatoes with salted water to cover in a small saucepan. Cover and bring to a boil over high heat. Reduce the heat and boil gently until completely tender. Drain.
Loosely mash the potatoes, adding the remaining 2 Tbsp butter. Fold in kale mixture. Season generously with salt and pepper. Serve hot with sausage.
