Spring Turnips with Herb Butter

Crop Turnip Hakurei

 

4 Tbsp butter, softened
1 Tbsp green onion, minced
4 Tbsp fresh herbs (parsley, thyme, chives…)
1 bunch turnips, quartered or sliced
salt and freshly ground pepper

Place the butter in a small bowl. Beat in the green onion and herbs. Set aside.Simmer the turnips over medium heat, in salted water to cover, until crispy tender, about 10 minutes. Drain well. Season with salt and pepper. Stir in 2 tablespoons of the herbed butter, and heat through. Serve very hot, with the remaining herb butter in a separate bowl.
