Celeriac and Potato Puree

This puree is a tasty alternative to traditional mashed potatoes, with a smooth, creamy texture that's sure to please the whole family. Celeriac is an often underrated root vegetable, but its subtly sweet flavour and slightly crunchy texture combine perfectly with potatoes to create a deliciously creamy and fragrant mashed potato.



Ingredients

  • 2 lbs potatoes
  • 1 lb celery root
  • salt and pepper
  • 4 tbsp. butter
  • 8 oz of 35% cream
  • pinch of thyme or savory


Method

  • Cut the potatoes and celeriac into large cubes, without mixing them.
  • Cook the potatoes in a large pot of salted water for 12 minutes. Add celery root and cook for 10 minutes.
  • Drain completely, then mashed potato. Add butter, cream, thyme, salt and pepper and blend until smooth.
